Our Gin Story

Nestled on our family farm in West Fife, we wanted to make a gin that truly reflects the land we love, the seasons we live by and the spirit of our distillery.

Every bottle begins with the heart of our farm: juniper, blaeberries, cranberries and other botanicals, many foraged seasonally by hand from the land surrounding the distillery.

These locally sourced ingredients give our gin a character that is both authentic and unique - a flavour that cannot be easily recreated.

Made in small batches in our copper gin still, each run is crafted with care and patience. The result is a gin that is clean and balanced, with depth, freshness and subtle complexity - a true reflection of our land, our family and the distilling tradition we are proud to continue.

The Botanicals

Every bottle of our Gin carries a little piece of our farm. These are just some of the botanicals we use - a mix of hand-foraged, homegrown and carefully selected ingredients that help bring the spirit to life.

There are a few more secrets in the blend, but this gives a true taste of what makes our gin uniquely ours.

At the heart of every true gin lies juniper - and ours are no exception. Hand-selected for their balance of pine and citrus, these small berries bring the unmistakable freshness and dry, resinous backbone that defines the spirit. They give structure and clarity - the taste that says this is gin.
Wild Scottish Blaeberries

Wild Scottish Blaeberries

Found growing wild across the distillery farm, our blaeberries (the Scottish wild blueberry) bring a soft, natural sweetness and a hint of woodland depth to the gin. Their flavour is delicate yet extremely vivid - a mix of ripe fruit and subtle earthiness that rounds out the sharper botanicals beautifully. Using our own blaeberries connects each bottle back to the land itself, capturing the quiet, rugged character of Fife in every sip. (These berries are hand foraged seasonally, so supply is limited)

Wild Scottish Cranberries

A rare and distinctly local touch - our cranberries are foraged right here on the distillery’s own land. They bring a natural tartness and gentle fruit sweetness that set this gin apart. Their bright, ruby character adds a subtle blush to the flavour, offering both freshness and depth. It’s an ingredient not often found in gin, but one that speaks directly to our home - a true reflection of the land that surrounds Knockhill Distillery.(These berries are hand foraged seasonally, so supply is limited)
Coriander Seeds

Coriander Seeds

Coriander seeds are one of the unsung heroes of gin. They bring a subtle citrus lift - almost like cracked lemon zest - alongside warm, peppery spice and a touch of nuttiness. This balance of brightness and depth helps bridge the gap between juniper and the other botanicals, adding a gentle complexity that unfolds slowly in the glass and lingers beautifully on the finish.
Orange Peel

Orange Peel

Sweet and fragrant, orange peel brings warmth and softness to the gin’s citrus character. Its natural oils release a rich, rounded aroma - less sharp than lemon, more mellow and inviting. On the palate, it adds gentle sweetness and a touch of spice, smoothing the edges and giving the gin a bright, sunlit depth that complements both classic and modern serves.
Angelica Root

Angelica Root

Earthy and aromatic, angelica root acts as the quiet backbone of the gin. It ties the brighter botanicals together, adding depth and a dry, herbal note that grounds the spirit. Often described as having hints of wood, spice and musk, angelica gives structure and balance - the element that turns a collection of flavours into a complete, harmonious gin.
Lemon Peel

Lemon Peel

Bright and lively, lemon peel lifts the spirit - quite literally. It adds a clean, zesty freshness that cuts through the deeper botanicals, bringing balance and light to the gin. The natural oils from the peel create a subtle citrus perfume, giving each pour a crisp, refreshing edge that lingers gently on the palate.

The Process

2. Maceration

Gentle, slow, precise.

Our botanicals are carefully steeped in neutral spirit for period before distillation. This allows the flavours to fully develop and meld, ensuring a balanced and aromatic gin.

3. Small Batch Distillation

Every batch monitored with care.

Limiting production lets us ensure balance, consistency and character that reflects the farm and the season.

4. Bottling

From still to bottle with attention at every step.

The gin is bottled on-site, ready to enjoy neat, in a classic serve, or with your favourite mixer - a true taste of West Fife.
