A very special day for us this week - on 29th December 2025, we completed our first gin distillation here at Knockhill Distillery. It was the first spirit to flow in West Fife in over 200 years and seeing it run for the first time on our own still was a moment the whole team will remember.
After the planning, preparation and gin development, finally watching the spirit start to flow was a thrilling moment for the whole team. The gin is now resting, allowing the botanicals to fully marry together before it’s bottled and ready to enjoy.
Next up, it’ll be the whisky stills’ turn - our first whisky distillation is on the horizon and we’re looking forward to sharing that milestone with everyone too.
