60 Casks

To mark the beginning of Knockhill Distillery, we are releasing just 60 unpeated Founders’ Casks to the public - the very first casks to be available. 


Ex-bourbon casks are the classic backbone of Scotch whisky maturation, and they’ll shape our spirit with a bright, elegant character.

You can expect notes of vanilla, honey and creamy toffee, balanced with citrus zest and gentle oak spice. Over time, the whisky develops layers of orchard fruits - apples, pears and a touch of peach - with a clean, golden sweetness that lets the character of our distillate shine through.

This style is fresh, versatile and refined, making it a perfect first cask for anyone who wants to experience the purest expression of our house style



Virgin Scottish Oak is something truly unusual in Scotch whisky. Unlike the bourbon or Port Pipe, which have already held liquid before, these casks are filled for the very first time - and with wood sourced here in Scotland. The result is a bold, distinctive style of maturation, one that places oak at the very forefront of the whisky.

Expect toasted spice, nutmeg and warming wood notes on the nose, followed by orchard fruits, honeyed grain and a touch of citrus on the palate. The finish is long and structured, with oak spice and chocolate undertones that soften beautifully over time. This is a whisky that wears its wood proudly, creating a profile both unusual and memorable.

To our knowledge, Knockhill Distillery’s Founders’ Casks are among the very first to offer Scottish Virgin Oak as part of an inaugural release - making this an opportunity as rare as the whisky itself.


Port Pipes, traditionally used in the ageing of fine Portuguese port, bring a sense of richness and grandeur to Scotch whisky maturation. At 600 litres, they allow for a slower, more measured interaction between spirit and wood, coaxing out layers of depth over time. The result is a whisky with elegance and intensity in equal measure.

Expect notes of ripe dark fruits - blackberries, figs and cherries - balanced by warming chocolate, honeyed malt and a gentle spice that lingers on the finish. The generous size of the cask allows these flavours to develop gracefully, giving a whisky that is both indulgent and refined.

While a handful of Scottish distilleries have experimented with Port Pipe maturations in rare bottlings, it remains an unusual choice for private casks. 

To our knowledge, very few - if any - distilleries have ever offered Port Pipes or Virgin Scottish Oak as part of their Founders’ Cask programme.
